Baked Chicken Dish
An easy-to-prepare dish.
This baked chicken dish does not take a lot of time to prepare. It is a simple, and flexible dish using chicken, onions, potatoes, and soup powder.
Use a deep heatproof oven glass dish or a Dutch oven to prepare your baked chicken dish. It works the best.
The recipe below can be easily halved. One can add additional chopped veggies such as bell peppers and mushrooms if preferred. Adding half a cup of grated parmesan cheese will take it to a different level.
Ingredients:
1 Kg of uncooked chicken pieces
1 packet of minestrone or onion soup powder (50 grams)
3 large potatoes, peeled and sliced
1 onion, chopped
2–3 garlic cloves minced
Salt and pepper to taste
Olive oil
fresh herbs (thyme or parsley, optional)
Process:
- Fry chicken pieces in olive oil till the skin is browned. Do not overcook as the chicken will be baked in the oven. You can use drumsticks or chicken thighs if preferred.
- Grease an ovenproof glass dish and add the fried chicken pieces.
- Add onions, garlic, and potatoes.
- Season with salt, pepper, and herbs if used.
- Dissolve the soup powder in 750 ml of cold water and pour over the ingredients.
- Bake in a preheated oven for 1 hour covered at 180° Celsius.
Serve warm with a leafy side salad.
