Battered Cauliflower Snacks

An oven-baked, easy-to-make recipe.

Cauliflower is rich in fiber. Due to its low-calorie count (25 /100 grams), it’s a great vegetable to enjoy when on a weight management diet. It’s also rich in vitamins and minerals.

The recipe below is for making cauliflower nuggets using oat flour. They are baked in an oven instead of fried in oil.

Ingredients:

4 cups of cauliflower florets
3 tablespoons oat flour
1 tablespoon parmesan cheese
1 tablespoon olive oil
2 tablespoons water
1 teaspoon mixed dried herbs
salt and pepper to taste

Process:

  1. Place oats and parmesan cheese into the bowl of a food processor.
  2. Season with herbs, salt, and pepper.
  3. Drizzle with olive oil. Pulse until it looks like fine breadcrumbs.
  4. Add eggs and water to another dish. Whisk till creamy.
  5. Dip cauliflower florets in the egg mixture and roll in the oat mixture.
  6. Place florets on a greased baking sheet.
  7. Bake in a preheated oven at 200 degrees Celcius for 15–20 minutes till cooked.

Let cool. Enjoy the florets with a dipping sauce of your choice.
