Cheese & Sausage Muffins

A Savory muffin recipe using Vienna or Frankfurter sausages.

Do you have some hotdog (Vienna) sausages or ham and cheese winking at you from the refrigerator? Not in the mood for making a hotdog and want to use the sausages?

Why not try this savory muffin recipe that goes well with a salad as a light lunch? You could also use a ¾ cup of cubed ham instead of sausages.

This recipe makes 6 big or 12 small muffins.

Ingredients:

1 cup all-purpose flour (250 ml)
¾ cup of milk (200 ml)
1 egg, large
2 tablespoons of olive oil
2 teaspoons baking powder
3 hotdog sausages
1 cup cheddar or your favorite sharp cheese
1 teaspoon mustard (Dijon)
A dash of Italian herbs
salt and pepper to taste
1 teaspoon chili flakes (optional)

Process:

  1. Preheat an oven to 200° C and grease a muffin pan with butter or oil.
  2. Cut the hotdog sausages (Viennas) into thin slices.
