Creamy Chia Dessert
An oven-baked creamy pudding with a hint of fresh ginger.

This dessert is the result of experimenting with Chia seeds to create an oven-baked creamy dish that can be enjoyed as a sweet or as a snack.
Finely chopped ginger adds a subtle enjoyable taste to the dish. This recipe makes between 2 and 4 servings based on the serving size.
Ingredients:
5 tablespoons Chia seeds
1 cup cream
1 cup milk
2 eggs (separated)
1 cm piece of fresh ginger, finely chopped
2 tablespoons apricot jam
2 tablespoons butter or olive oil
a drop of vanilla essence
1–3 tablespoons sugar or granulated sweetener (to your taste)
Process:
- Bring milk, cream, sugar, salt, and butter to boiling point.
- Add the Chia seeds to the cooking milk mixture.
- Reduce heat to low. Add the finely chopped ginger and simmer for 5 minutes while continuously stirring. Let cool for 15 minutes.
