Creamy Chia Dessert

An oven-baked creamy pudding with a hint of fresh ginger.

This dessert is the result of experimenting with Chia seeds to create an oven-baked creamy dish that can be enjoyed as a sweet or as a snack.

Finely chopped ginger adds a subtle enjoyable taste to the dish. This recipe makes between 2 and 4 servings based on the serving size.

Ingredients:

5 tablespoons Chia seeds
1 cup cream
1 cup milk
2 eggs (separated)
1 cm piece of fresh ginger, finely chopped
2 tablespoons apricot jam
2 tablespoons butter or olive oil
a drop of vanilla essence
1–3 tablespoons sugar or granulated sweetener (to your taste)

Process:

  1. Bring milk, cream, sugar, salt, and butter to boiling point.
  2. Add the Chia seeds to the cooking milk mixture.
  3. Reduce heat to low. Add the finely chopped ginger and simmer for 5 minutes while continuously stirring. Let cool for 15 minutes.
