Chicken in a Papaya Sauce

Yesterday, I wondered how chicken pieces cooked with fresh papaya would taste. I added a couple of ingredients together and it turned out to be a yummy tangy and saucy chicken recipe.

I made the recipe with small chicken drumstick pieces. It will work with chicken breast pieces as well. If chicken breast is used fry it in olive oil till the skin is browned and crispy. Let it cool and cut it into pieces to cook in the papaya sauce.

Add chili flakes or Tabasco sauce to your taste for a more spicy warm taste.

Ingredients: (3–4 servings)

400 grams of chicken pieces with skin
3 tablespoons olive oil
0.5 cups of finely chopped fresh papaya
2 tablespoons tomato puree, canned
1 tablespoon apricot jam or chutney
1 tablespoon freshly squeezed lemon or lime juice
1 tablespoon soy sauce
3 garlic cloves, crushed
2–3 cm piece of fresh ginger root, finely chopped
2 cups of boiling water
Salt and black peppercorns to taste

Process:

  1. Fry the chicken pieces in a thick bottom pot in olive oil until browned but not cooked.
  2. Add all the other ingredients. Simmer on medium heat with the pot’s lid on till a thick sauce forms. About 20–25 minutes.
  3. Reduce heat to low and simmer for another 5–10 minutes.

Serve with rice or mashed potatoes and a side salad.
