Coconut Flour Crumpets

Baked in the oven these crumpets are fluffy, light, and healthy.

Coconut flour has a lower glycemic index rating than wheat flour. As a result, it takes longer to digest than wheat flour and will not cause a sudden spike in blood sugar.

Coconut flour contains 5 grams of fiber, 3 grams of protein, 3 grams of sugar, and 1.5 grams of fat per 2 tablespoons of coconut flour. It is a good
source of vitamins, and minerals such as potassium and iron.

The crumpets are fluffy and can be enjoyed with a healthy topping of low Glycaemic Index fruits (for example blueberries and strawberries) and/or
a sugar-free keto sauce.

Ingredients:

¼ cup coconut flour (4 tablespoons)
1 teaspoon baking powder
2 eggs (separated)
100 ml milk
3 tablespoons olive oil
a drop of Vanilla essence
a dash of salt

Process:

  1. Add the dry ingredients to a bowl.
  2. Add the egg yolks, oil, and milk to a jug. Mix well.
