Creamy Chicken livers

With bell peppers, bacon, onions, and brandy.

Chicken livers are a nutritious and affordable source of protein. This was served as part of a brunch buffet when I entertained friends and family. It was one of the favorites among guests.

The spices, cream, and brandy gives it an interesting taste. Chicken livers are high in essential vitamins (A, B, C, E) and minerals, (iron, folate, and selenium).

This recipe makes 4–6 portions based on serving size.

Ingredients:

400 grams chicken livers, quartered
1 onion, chopped
½ bell pepper, chopped
50 grams of bacon, chopped
125 ml pouring cream
1 tablespoon Worcestershire sauce
1 teaspoon cayenne pepper
salt and pepper, to taste
2 tablespoons olive oil
25 ml brandy or sherry

Process:

  1. Fry the onion in the olive oil till golden brown. Add the bacon and fry till cooked.
  2. Add the chicken livers, bell pepper, and spices. Fry till the chicken livers are cooked stirring regularly.
  3. Add the cream and cook for 10 minutes over medium heat. Add brandy or sherry and simmer for 5 minutes on the lowest setting.
