Fruitcake
A no-added-sugar fruit cake recipe.

In our family, it is tradition to bake a fruitcake for the December festive period. I baked this no-added sugar fruitcake for the last couple of years.
The sweetness in the cake comes from the fruits used in the recipe.
Ingredients:
500 grams mixed fruits and citrus peel
8 dates, pitted and chopped
0.5 cup of orange or nectarine juice
200 grams glazed cherries, quartered
0.5 cup of chopped walnuts, optional
2 teaspoons allspice or pumpkin spice
1 teaspoon cinnamon
1 teaspoon ginger
1 cup whole grain flour (wheat, or spelt)
1 large egg, whisked
1 teaspoon baking powder
0.5 teaspoon bicarbonate of soda
1 cup boiling water
0.25 cup brandy or sherry
3 tablespoons olive oil
A dash of salt
Process:
- Add mixed fruits, dates, glazed cherries, walnuts, orange juice, and water into a pot. Simmer for 15 minutes over low heat. Add spices, stir and let cool.
- Add the remaining ingredients including the cooled fruit mixture into a large glass bowl. Stir well.
- Line a bread loaf pan with greased baking paper. Add cake mixture.
Bake for 1 hour at 180 degrees Celcius or till a knife inserted into the middle of the cake comes out clean. - Let cool. Wrap in cling film and store in the refrigerator.
