I do enjoy an omelette for breakfast or a snack at any time. Sometimes when I bake them in a pan they break when I flip them over which is annoying. I have to work on my technique.

I was in the mood for a ham and cheese omelette yesterday. I decided to bake it in the oven as an experiment. It turned out fluffy, creamy and tasty. I cut it into rectangles and served it with whole-grain bread.

Ingredients:

2 eggs (separated)
0.25 cup of ham (pieces)
1 cup of cheddar cheese
1cup of milk
a dash of Italian herbs
salt and pepper (to taste)
Minced garlic (to taste, optional)

Process:

  1. Add salt to egg whites. Whip till soft peaks form
  2. Mix the milk, herbs, pepper, garlic (if used) and egg yolks together. Spoon the whipped egg whites gently into the mixture
  3. Add the ham and cheese to a greased oven dish. Add the milk mixture
  4. Bake in a preheated oven at 180° Celsius for 30 minutes.
  5. Turn the oven off. If the eggs are still wobbly leave them in the switched-off oven for 10 minutes.

Enjoy with bread, buttered toasted bread, or English muffins.
