Kuru Fasulye (Turkish Bean Stew)

I fell in love with Kuru Fasulye when I lived in Istanbul. It is a stewed white bean dish in Turkish cuisine made with white beans, olive oil, onion, tomato paste, or tomatoes.

Meat (beef or lamb pieces) can be added if preferred. It is then called Etli Kuru Fasulye (meat and bean stew). It is a hearty, filling, and tasty meat and bean stew that is served in restaurants all over Turkey with crusty white bread.

Below is my version of Etli Kuru Fasulye using a tin of Cannellini beans. Wash and drain the beans to remove excess salt. You could use home-cooked beans as an alternative.

To turn this into a vegetarian dish remove the meat and add diced potatoes and carrots. Use your favorite vegetable stock to give it more flavor.

Ingredients:

250 grams of beef stewing meat, cut into 1 cm cubes
1 Large onion, chopped
3 Tablespoons of Olive Oil
3 Cloves of garlic, minced
1 Large tomato chopped
1 Tablespoon tomato paste
