Mango Yoghurt Curry Sauce

A mild and creamy sauce as a base for meat and vegetable curries.

Use this mild and fruity curry sauce for use in chicken curry dishes. Mango pairs well with chicken. It is a simple sauce to make and is ready in 20 minutes.

Leave it overnight in the fridge to mature before using it to cook a curry using either chicken, chick peas, or vegetables.

Ingredients:

3 tablespoons olive oil
1 onion, chopped
1 teaspoon chili powder
4 garlic cloves, minced
2 teaspoons curry powder
0.5 teaspoon turmeric powder
0.5 teaspoon coriander powder
1 teaspoon ginger powder
a dash of cinnamon and cumin
salt and pepper to taste
1 cup of water
200 ml natural yogurt
1 cup ripe mango pieces, chopped

Process:

  1. Fry the onions in the olive oil till cooked and translucent.
  2. Add the spices (curry, coriander, turmeric, etc.) and water.
  3. Cook for 5 minutes. Add the yogurt and mango pieces and simmer for 15 minutes.
  4. Let cool. Store overnight in the refrigerator.
