Marshmallow Tart

Most South African have a sweet tooth. We like to add sweet things to our starters and main dishes. My friends here in Europe are always pleasantly surprised when they discover a raisin or apricot in a curry.

Our desserts are very sweet. Whenever I make a baked pudding I nearly halve the sugar contents.

The recipe below is for a no-bake tart. Most no-bake tarts in South Africa have sweetened condensed milk and cream in them. Thus, high in calories. I like to make a no-bake tart occasionally as it represents home to me.

The marshmallow tart is fluffy, sweet and interesting. It can be served in individual glasses when entertaining, like the one in the main photo. This recipe makes roughly 6 — 8 servings.

Ingredients:

250ml whipping cream
20 marshmallows or 1.25 cups of mini marshmallows
125ml freshly squeezed lemon juice
1 tin sweetened condensed milk
1 pack of digestive biscuits (graham crackers).

Process:

  1. Whip the cream till soft peaks form.
