Monkey Gland Sauce

A South African favorite barbeque sauce recipe for steaks, chops, spare ribs, and burgers.

Monkey gland sauce, hmmm… brings up fantastic childhood memories. To ensure there is no misunderstanding, this favorite barbecue-style sauce does not involve using any parts of a monkey in its preparation. The origin of the name of the sauce is a bit vague.

Monkey gland sauce is a spicy, thick, tangy, sweet sauce made using tomato sauce, Worcestershire sauce, vinegar or wine, chilies, or Tobasco sauce, and garlic. Some people will include a generous dash of ginger to spice it up a bit.

It’s a favorite condiment and steakhouse sauce in South Africa. It can be served at barbeques, with steak or juicy burgers (meat or vegetarian).

Ingredients:
1 onion, very finely chopped
3 garlic cloves, minced
3 tablespoons olive oil
0.5 cup tomato sauce, your favorite brand
0.25 cup Worcestershire sauce
0.5 cup chutney, your favorite brand
1 tomato, finely chopped
1 tablespoon sugar
3 tablespoon vinegar (any brand) or red wine, or brandy
1–2 teaspoons Tobasco sauce
0.25–0.5 cup of water
