One Pot Chicken & Rice Dish

With Moroccan tagine spice, garlic, ginger, and cayenne pepper.

A one-pot dish as a main meal for cold winter nights. A simple to make hearty dish.

Ingredients:

400g chicken breast (cut into pieces)
1 small can kidney beans
1 onion (chopped)
2 carrots (sliced)
1 teaspoon Moroccan tagine spice
2 cloves garlic (minced)
0.5 teaspoon powdered ginger
1 teaspoon cayenne pepper
salt and pepper to taste
0.5 cup parboiled rice
2 tablespoons olive oil
1 cup water
3 tablespoons freshly squeezed lemon juice

Process:

  1. Fry the chicken pieces in olive oil till lightly browned.
  2. Add the onions, garlic, ginger, cayenne pepper, and Tangine spice. Stir fry for 2 minutes.
  3. Add the water, lemon juice, carrots, salt, and pepper and simmer over low heat for 20–30 minutes.
  4. Drain and wash the kidney beans to remove excess salt. Add the parboiled rice and kidney beans to the cooking chicken.
  5. Simmer till the rice is soft and cooked. Add a bit of water if needed 1 tablespoon at a time.
  6. Once the rice is cooked, simmer over low heat till most of the water evaporated.

Enjoy with a side salad.
