One Pot Chicken & Rice Dish
With Moroccan tagine spice, garlic, ginger, and cayenne pepper.

A one-pot dish as a main meal for cold winter nights. A simple to make hearty dish.
Ingredients:
400g chicken breast (cut into pieces)
1 small can kidney beans
1 onion (chopped)
2 carrots (sliced)
1 teaspoon Moroccan tagine spice
2 cloves garlic (minced)
0.5 teaspoon powdered ginger
1 teaspoon cayenne pepper
salt and pepper to taste
0.5 cup parboiled rice
2 tablespoons olive oil
1 cup water
3 tablespoons freshly squeezed lemon juice
Process:
- Fry the chicken pieces in olive oil till lightly browned.
- Add the onions, garlic, ginger, cayenne pepper, and Tangine spice. Stir fry for 2 minutes.
- Add the water, lemon juice, carrots, salt, and pepper and simmer over low heat for 20–30 minutes.
- Drain and wash the kidney beans to remove excess salt. Add the parboiled rice and kidney beans to the cooking chicken.
- Simmer till the rice is soft and cooked. Add a bit of water if needed 1 tablespoon at a time.
- Once the rice is cooked, simmer over low heat till most of the water evaporated.
Enjoy with a side salad.
