Pampoenkoekies (Pumpkin Muffins)
A South African favorite made with maple syrup or honey, and cinnamon.
Pampoenkoekies (pumpkin cakes or fritters) are a favorite side dish in South Africa served with a meal. It usually has at least a cup of added granulated sugar. It is fried in oil or butter.
I adapted the original recipe to make pumpkin muffins with reduced sugar and using less oil/butter. Instead of adding granulated sugar one can use maple syrup or honey.
Ingredients:
Makes 12muffins
2 cups cooked and mashed pumpkin (cooled)
0.5 cup (125ml) all-purpose flour
50 grams butter (room temperature) or 3 tablespoons olive oil
1 teaspoon baking powder
2 medium eggs (whipped)
2 tablespoon maple syrup
a dash of salt
a dash of cinnamon (optional)
extra butter to grease a muffin pan or paper cups
Process:
1. Preheat your oven to 200°C
2. Grease a muffin pan with butter or oil
3. Mix all ingredients (pumpkin, flour, baking powder, eggs, maple syrup etc) well to form a batter
