Thanks for your feedback and recommendations. I experimented with sourdough but it wasn't successful. Not sure what I did wrong.

I have used a mix of whole grain flour (80%, Rye, or Whole wheat, or Spelt) before with a mix of oatmeal. Love the taste of whole grain bread. I will try your suggestion. Thanks for sharing.
