Turn Your Potato Skins Into A Tasty Snack

Part 1 in the series ‘Sustainability Tips.’

Usually, I bin my potato peels into the bio container in my household. Last night I decided to turn my potato skins (peels) into a tasty snack. Why waste them?

According to the WebMD Website, potatoes “are a good source of fiber.” Fiber helps movement through our digestive system. Potatoes are also “full of antioxidants that work to prevent diseases and vitamins that help your body function properly.”

Baked potato skins:

  1. are high in antioxidants which lower your risk of heart disease and cancer. It also contains potassium. A potassium-rich diet can help decrease blood pressure, protect the heart and reduce the risk of stroke. (Source: WebMD Website).
  2. contains Magnesium which helps with the transportation of electrical signals in the body.

Here is my simple recipe to turn potato skins into a tasty snack.

Ingredients:
Peeled skins of 4 potatoes.
Herbs of your choice. I used an Italian herb mix.
Salt and pepper to taste
1 teaspoon Olive oil.
