Zucchini Cream Cheese Muffins
Made using steel-cut oat flour.
I like to include zucchini when baking cakes or brownies. I decided to experiment with baking a savory muffin using zucchini and cream cheese.
I used steel-cut oats which I grinded to the consistency of flour as it has a
low glycaemic index (GI). Food with a low GI index ensures a slow release of sugar into your bloodstream, helping to keep your energy levels stable throughout the day.
Steel-cut oats are also rich in fiber which helps you feel fuller for longer and helps with the movement of food through the digestive system. In addition, it contains healthy amounts of calcium, iron, antioxidants, B vitamins, and magnesium. (Source.)
Ingredients:
1 cup steel-cut oats, grinded
2 teaspoons baking powder
3 tablespoons cream cheese, softened
3 tablespoons olive oil or melted butter
½ teaspoon Italian dried herbs
1 teaspoon onion powder
2 cloves garlic, minced
2 tablespoons grated Parmesan cheese
2 eggs, beaten
salt and pepper to taste
½ cup zucchini, grated, and squeezed to remove excess moisture
